Carrot Top Pesto

CARROT TOP PESTO

2 cups carrot tops, chopped

1 cup basil

½ cup walnuts, toasted

½ cup grated vegetarian parmesan cheese

½ cup olive oil

1 clove garlic, peeled

¼ teaspoon salt

½ lemon juice

Pepper, to taste

 

PREPARATION

In the bowl of a food processor, add all the pesto ingredients and pulse until smooth. Serve roasted carrots with pesto. Pesto can also be used for pasta, caprese and more! Refrigerate for up to 4 days.

Chimichurri

Chimichurri is a traditional Argentinian sauce and condiment commonly used with grilled meats. It is made from finely chopped parsley, minced garlic, olive oil, oregano, and red wine vinegar. There are two main types of chimichurri: green (chimichurri verde) and red (chimichurri rojo), with the latter including additional ingredients such as red bell pepper and paprika. The sauce is known for its fresh, tangy, and slightly spicy flavor, making it a popular accompaniment to dishes like steak, chicken, and sausages.

My favorite way of processing garlic is to make COP-G which is CELERY ONIONS PEPPERS & GARLIC


1 Part Sautéed Celery which May Include Celery Tops

2 parts sautéed onions - May be all 1 kind Or a mixture of any combination

White Onion-Yellow Onion-Red Onion -Green Onions or Onion Tops

You May Also Make This Mix Using Leeks instead or In Combination With The Onions

1 Part Sautéed Mild Peppers like Bell Peppers - I Grow Pepperoncini So I Use Them


Then measure your sautéed mixture and then Mix 1 Tsp Garlic For Every Cup


This mixture is equivalent to 2 cups fresh veg & 1 Tsp garlic which you may use in any recipe that calls for an onion to add more nutrients and save a lot of time

Snow Ice Cream

1 can canned milk or 2 cups cream or half and half

1 cup sugar

1 raw egg

1 tsp vanilla

Fresh snow
